When barbecue season really gets going, it is all about one thing: fantastic homemade dishes that bring people together. At ONYX Cookware we love recipes that are both simple and flavourful – and today we are sharing one of our absolute favourites: Grilled BBQ-marinated chicken skewers with juicy corn on the cob and homemade barbecue sauce.

This recipe is perfect for everything from everyday barbecues to summer’s big gatherings. And the best part? It only needs a few ingredients, but tastes like something that could have taken hours to make.

Recipe: BBQ-marinated chicken skewers with grilled corn on the cob

Ingredients – chicken skewers:

  • 500 g diced chicken breast

  • 4 tbsp homemade barbecue sauce (see below)

  • Fresh corn on the cob (preferably pre-cooked)

  • Butter and sea salt to serve

Ingredients – homemade barbecue sauce:

  • 2 tbsp vegetable oil

  • 1 dl ketchup

  • 1 tbsp brown sugar

  • 1 tbsp apple cider vinegar

  • 1 tsp Dijon mustard

  • 1 tsp smoked paprika

  • ½ tsp garlic powder (or 1 freshly grated garlic clove)

  • ½ tsp onion powder

  • A pinch of chilli flakes (optional)

  • Salt and pepper to taste

How to make the barbecue sauce:

  1. Put all the ingredients in a small saucepan.

  2. Heat over a medium heat and simmer for 5-7 minutes until the sugar has dissolved and the sauce has thickened slightly.

  3. Taste as you go – if you want more sweetness, acidity or heat, adjust with brown sugar, vinegar or chilli.

How to grill the skewers and corn on the cob:

  1. Toss the diced chicken in the cooled barbecue sauce, cover and leave to marinate for at least 30 minutes (preferably longer).

  2. Thread the chicken onto skewers and grill over direct heat for 10-12 minutes. Turn as they cook and brush with extra sauce.

  3. Place the corn directly on the grill and cook for 5-7 minutes until it has lovely grill marks.

  4. Brush the corn with butter and sprinkle with a little sea salt before serving.
