Rogan Josh with chicken
A warming, spicy dish with chicken, onions, chilli and aromatic spices. Perfect for a cosy dinner, with plenty of flavour developing in the pot and oven.
Rogan Josh is a spicy and aromatic stew in which warming spices and tender chicken provide plenty of depth and flavour. It is the kind of dish that feels hearty, warm and inviting – perfect for evenings when you want food with plenty of flavour.
The whole spices provide a deep, distinctive base, while onions, garlic, ginger and chilli round out the dish with warmth and richness. Once the chicken is browned and the ingredients are together in the pot, the dish largely takes care of itself in the oven.
For this dish, a 24 cm pot is a good choice, as it gives you room for chicken, spices and liquid in the same pot. During cooking, a solid spoon is handy for stirring the dish and gently combining the ingredients without crushing them too much.

Tips for an extra flavourful Rogan Josh
Brown the chicken in small batches so it develops better colour and more flavour from the start.
Let the dish rest for a couple of minutes after taking it out of the oven so the flavours come together even better before serving.
Serving
Serve Rogan Josh while it is still warm, ideally with brown rice or a good piece of bread to soak up the spicy sauce. This makes the dish both more filling and even more inviting.
To make the meal a little more appealing, add fresh herbs or a simple salad on the side. This provides a fresh contrast to the warming spices and makes the meal more rounded.
This dish shows how much flavour you can get from simple ingredients and a little time in the oven. Rogan Josh with chicken is therefore an obvious choice when you want to make something easy, warming and really tasty.
